Bella Monica Flatbread Company Update - Whole Foods Raleigh

More exciting news for Bella Monica Flatbread Company and their fans...

I wrote on Tuesday about Bella Monica pizzas being available in the Cary Whole Foods store.

I have just received word that their Gluten Free Pizzas are also now available in the Raleigh Whole Foods location on Wade Avenue in West Raleigh! The pizzas will also be sold for $10.99 at both locations which is a little less than the price at Harmony Farms.

Looks like the pizzas will also be making their way onto shelves at the Earth Fare Brier Creek location later this month. Stay tuned for those release dates! Thanks to Trevor and his company for getting this product out there for us to enjoy.

I'm excited that the pizzas are coming to Whole Foods! I checked last week and saw that they weren't there yet. Hopefully they'll come to the Chapel Hill Whole Foods too!

Thanks for the post. If you need to get them in Chapel Hill and you are so inclinded please go in and ask the store manager for them and tell them that they are available in Cary and Raleigh. They will listen and it will help make it happen.

We were *really* excited about these and tried two this weekend. Unfortunately, we were a little disappointed because the texture was still a bit "gummy" after following the directions and again after trying to make it crispier. The crust was wonderful, but the "body" of the pizza under the toppings simply would not firm up. I wonder if a pizza stone, hotter oven settings, and/or a double-baking method would yield better results. Don't get me wrong -- we're huge fans, especially of BM's new and extended in-house GF menu. Perhaps it might be possible to purchase the crusts by themselves, bake once, add toppings, and bake again? :)

I appreciate your honest input on the product and I am sorry that they did not perform to your highest satisfaction. Like our restaurant, we are absolutely committed to continuously listening to our customers and improving our offerings. We always say it takes a neighborhood to raise a restaurant and the same sentiment holds true as we “raise-up” our packaged goods business. Fundamentally, we believe we have a delicious product. But, like anything, these products will evolve and adjustments will be made to the baking process and the directions. Thanks for your patience as we grow and never stop with that input!!

In an effort to better understand your experience I do have a few questions. Which flavors did you purchase? Did you put the pizza right on the oven rack? How defrosted was the product when you put it in the oven?

A pizza stone would be great to try. I would also suggest increasing the cook temp to perhaps 425-450 and increase the cook time.

As for just crusts, we are working on putting out a crust. Specifically, we are working on a lactose free, GF free crusts. Stay tuned.
